I was on the phone with a writer this recently adding my insight into an article he was working on. One of the points I was trying to make was the need for plenty of fruits and vegetables in the diet. I suggested to aim for 9 servings (combined) daily. Seems like a lot, but it can be done. In fact it can be as simple as:
- Breakfast – 1/2 cup fruit & 1 cup vegetable
- Lunch – 1 cup fruit & 1 cup vegetable
- Dinner – 2 1/2 cups vegetable (mix raw and cooked)
- Snack – small piece of fruit (or 1/2 cup)
If 9 is our goal each day then we had better get these two foods into breakfast pronto so we aren’t playing catch up later in the day.
One breakfast I have been having more lately is simple but very filling and is a way to get a vegetable serving in. It only takes minutes to make so it appeals to our very busy lives.
Let’s call this…Arugula and Eggs
INGREDIENTS:
1-2 EGGS
1 CUP (HANDFUL IS EASY) BABY ARUGULA
1 TBSP. SHREDDED PARMESAN CHEESE
DIRECTIONS:
Crack eggs into a bowl. Beat lightly and microwave for 30-45 seconds until cooked through. Top with a handful of baby arugula and some shredded parmesan cheese.
Pair this with a piece of fruit and it’s breakfast in less than 5 minutes that gives you a protein, vegetable and fruit. I think you’ll find a meal like this will hold you much longer than a freezer breakfast sandwich or a pastry from your local coffee shop drive through. Arugula can easily be substituted with baby spinach if the peppery taste of arugula is not your speed. Both will give you a good dose of Vitamins A and C to start your day.
Trust me, this is tasty and will especially appeal to people who don’t like traditional breakfast foods.
