  1. Heat a nonstick, cast iron or other pan over medium heat. Crack two eggs into pan and add a pinch of salt and pepper to taste. Cook as desired (scrambled, over easy, etc). Meanwhile cut a medium avocado in half and scoop out, placing on your plate. Once eggs are cooked, serve with the avocado.
